So all this snow and stay indoors nonsense has created a bit of a buzz in our kitchen. It's nice to heat up the oven and make cookies or brisket or the occasional bread loaf. But these cookies are the easiest of the bunch and also amazingly perfect for everyone - even me! Gluten free, dairy free and just divine. I shot these photos with my newly printed table runner. I love the linen and the pattern that the carved stamp I made for Christmas/New Year's cards this past season created. More on that later!
Recipe time!
Heat oven to 350F
1 Cup of Almond or Cashew Butter
1 Cup of Bittersweet Chocolate Chips
1 teaspoon baking soda
1/2 Cup of brown sugar
1 egg or make it vegan with egg substitute
Mix the ingredients in a bowl until well blended.
Drop a rounded tablespoon of dough onto cookie sheets covered with parchment paper.
Cook for 8 or 9 minutes.
Take out of oven and let cool a bit before moving to cooling rack.
Makes a dozen.
(thank god there are only 12)
